Organic sugar is made from evaporated cane juice, which retains some of the molasses, giving it a darker color and richer flavor. The juice is heated to create sugar crystals, which are then centrifuged and washed to remove most of the molasses. This process gives organic sugar a pale blond color and a slight molasses flavor.
Organic sugar can be used in the same ways as non-organic sugar, and there’s no difference in taste, texture, or functional properties between the two. Organic sugar does not contain artificial preservatives, colors, or flavors.
